The Wine Program at King William

Champagne First. European Rooted. Global in Scope.

Wine is at the heart of the experience at King William.

Our growing cellar features more than 225 selections and more than 1,200 bottles, with particular depth in Champagne and the classic wine regions of Europe, complemented by benchmark producers and discoveries from Napa Valley, South America, Australia, South Africa, Texas and beyond.

Led by Chef and Sommelier Jill Arreguin, the program was built around a simple belief: wine should make a meal more memorable, and discovering a remarkable bottle should feel exciting rather than intimidating.

From grower Champagne and Grand Cru Burgundy to mature Bordeaux, Vega Sicilia, Dominus, Don Melchor and wines from smaller producers around the world, every bottle earns its place at the table.

And the cellar never stands still. New producers, vintages and Champagne selections are continually added as Jill discovers wines worth sharing.

Champagne First

Champagne has been part of King William's identity from the beginning.

Our growing Champagne collection brings together celebrated houses, grower producers, vintage bottlings, rosé, Blanc de Blancs, Blanc de Noirs and prestige cuvées.

You'll find names such as Krug, Bollinger, Taittinger, Pol Roger and Perrier-Jouët alongside smaller producers and new discoveries.

Champagne may begin the evening, accompany caviar or remain at the table throughout dinner. We believe it belongs at the table far more often than only on special occasions.

For guests interested in exploring further, our team is always happy to guide you through different producers, styles and pairings.

A Cellar Built for Discovery

The foundation of the cellar is European, with particular depth in France and selections from Italy, Spain, Germany, Portugal and other historic wine regions.

Burgundy ranges from Chablis and village wines to Premier and Grand Cru bottlings. Bordeaux includes both current releases and mature vintages from celebrated estates. Spain brings Rioja, Ribera del Duero and benchmark producers such as Vega Sicilia, while Italy stretches across its classic regions and indigenous varieties.

Beyond Europe, the collection continues through Napa Valley, Oregon, Argentina, Chile, South Africa, Australia, Texas and other regions around the world.

Benchmark producers such as Dominus, Don Melchor, Opus One and Catena sit alongside lesser-known estates chosen because we believe the wine deserves to be discovered.

The result isn't intended to be a collection of labels.

It is a cellar built to be opened.

The King William 70

Great Wine Doesn't Have to Be Expensive

Some of the most memorable bottles aren't the most expensive ones.

The King William 70 is our collection of wines priced under $70, created to make exploration part of the King William experience.

Each month, we highlight a rotating selection from the collection—wines chosen because they offer character, a sense of place and exceptional value.

It might be a region you've never explored, a grape you've never tried or a producer Jill believes deserves more attention.

Ask us what's drinking beautifully tonight.

Rare, Mature & Remarkable

For collectors and guests looking for something extraordinary, the cellar also includes mature vintages, Grand Cru Burgundy, classified Bordeaux, prestige Champagne, large formats and collectible wines from some of the world's most respected estates.

Among the producers represented in the growing collection are Krug, Taittinger Comtes de Champagne, Château Margaux, Château Mouton Rothschild, Château Haut-Brion, Vega Sicilia, Dominus, Opus One, Don Melchor and Catena Zapata.

Some bottles have been waiting decades for the right table.

If you're celebrating something important—or simply believe tonight is reason enough—ask us what is in the cellar.

Wine by the Glass

A great wine experience shouldn't require committing to an entire bottle.

Our by-the-glass program includes Champagne, white and red wines selected to complement Chef Jill's menu, along with reserve wines poured using Coravin.

The reserve program allows us to share wines that would rarely be offered by the glass and gives guests the opportunity to explore an important region, producer or bottle one glass at a time.

Selections change as the menu and cellar evolve.

Food and Wine, Considered Together

Jill approaches wine the same way she approaches cooking: with curiosity, respect for tradition and an understanding that the experience at the table matters more than rules.

Her culinary background and wine studies—including WSET Level 2—shape a program in which food and wine are considered together from the beginning.

Caviar may lead us toward Champagne. A Texas steak may call for mature Bordeaux, Napa Cabernet or something unexpected from South America. House-made pasta can take us to Burgundy, Piedmont or a bottle we simply think will make the dish more interesting.

You don't need to know what you want before you arrive.

Tell us what you enjoy, what you're eating and perhaps what you'd like to spend.

We'll help you find the bottle.
