Our Steaks

A Great Steak Tells a Story

At King William Wine Co., we believe a truly memorable steak begins long before it reaches the table. It starts with exceptional cattle, trusted ranchers, skilled butchers, thoughtful preparation, and a deep respect for the ingredients.

Every steak we serve reflects our philosophy that remarkable dining is never about excess—it's about craftsmanship, balance, and creating moments worth remembering.

The Perfect Pairing

A remarkable steak deserves a remarkable wine.

King William's growing cellar features more than 225 selections, from mature Bordeaux and distinguished Napa Valley Cabernet—including producers such as Dominus—to celebrated wines from Italy, Spain, Argentina, Chile, Australia and beyond.

Whether you're opening a special bottle, exploring a new producer or looking for the perfect Cabernet or Bordeaux to accompany one of our Prime Texas steaks, our team is always delighted to guide the pairing.

A Personal Journey

For as long as I can remember, I've been drawn to restaurants where a truly exceptional steak was more than a signature dish—it was an expression of craftsmanship, respect for the ingredient, and the character of the place itself.

Throughout my travels, I've made a point of seeking out those experiences, from neighborhood bistros and historic taverns to celebrated dining rooms across Europe, South America, and beyond. Each meal reinforced the same lesson: extraordinary steaks don't begin in the kitchen. They begin with exceptional cattle, thoughtful ranching, and producers whose commitment to quality is evident long before the beef reaches the chef.

Those experiences shaped my appreciation for remarkable beef and ultimately guided our search for the finest Texas steaks worthy of serving at King William Wine Co.

When Jill and I envisioned this restaurant, we made a simple promise to ourselves: nothing would appear on our menu unless we genuinely believed it belonged there. Every dish would reflect our shared commitment to exceptional ingredients, thoughtful preparation, and genuine hospitality. Our steaks are no exception. They earned their place—not because a fine dining restaurant is expected to serve steak, but because we found beef worthy of Chef Jill's kitchen and a philosophy that reflects everything we believe about great dining.
