Chef Jill Arreguin never set out to collect accomplishments. She spent a lifetime collecting lessons—and every one of them found its way into her kitchen.
Her journey began on a family farm in the American Midwest, where meals were built from the seasons and nearly everything on the table was grown, raised, or preserved by hand. Before winter arrived, the family gathered to butcher livestock that would sustain them through the colder months. Grocery shopping was a carefully planned monthly event, and even as a child, Jill learned that great meals came not from abundance, but from resourcefulness, respect for every ingredient, and the belief that the table is where life's most meaningful moments unfold.
Drawn to the kitchen from an early age, Jill began her culinary career in the kitchen of an upscale Irish restaurant. There she built a strong classical foundation, training in whole-animal butchery, fish fabrication, traditional stocks and mother sauces, and the disciplined techniques of European cuisine. It was an environment that demanded precision, consistency, humility, and respect for every ingredient—principles that continue to define her cooking today.
When Jill welcomed her son, she made the difficult decision to step away from the restaurant industry. She wanted a career that offered greater financial stability and more time with her young family, so she transitioned into the corporate world, building a successful career in technology and financial systems. Her work—including leadership roles with Microsoft and other leading global technology companies—took her around the world. Yet no matter where business took her, she always found her way back into professional kitchens. Sometimes she worked alongside chefs for weeks, sometimes only for a single service, learning their techniques, traditions, and cultures firsthand. The dream of owning her own restaurant was never abandoned—it was simply waiting for the right season of life.
Her culinary education continued around the world. In Newport, Rhode Island, she cooked for historic estates and private dinners. In northern Italy she immersed herself in handmade pasta, discovering that the finest ingredients often require the simplest preparation. In Rome she learned traditional pasta by feel rather than recipe. In Goa she explored spice farms and regional flavors rooted in centuries of Portuguese influence. Along the way she studied Nordic seafood preservation, Scottish beef and whisky traditions, Argentine asado and whole-animal butchery in Mendoza, Baja seafood, and the deeply layered moles and chocolate traditions of Oaxaca.
Alongside her culinary education, Jill developed an equally deep passion for wine. She has completed formal Court of Master Sommeliers theory, earned her WSET Level 2 certification, is currently pursuing WSET Level 3, and has built a personal cellar of nearly 600 bottles. To Jill, wine has never been an afterthought. Every dish begins with the question of how food and wine can become more expressive together than either could be alone. That philosophy shapes the Champagne and wine program at King William Wine Co., where every pairing is intentional and every bottle is selected to complement the food it accompanies.
Every lesson she learned, every bottle she studied, and every experience she embraced prepared her for one purpose: creating a restaurant where food, wine, and hospitality are experienced as one. Today, those years of learning find their expression at King William Wine Co., where exceptional Texas ingredients, thoughtful technique, and genuine hospitality come together in a style of cooking that is both deeply personal and unmistakably her own.
Beside Jill throughout every chapter of that journey has been her husband and business partner, Juan Arreguin, whose unwavering belief helped transform a lifelong dream into reality. Together they created King William Wine Co. with a simple purpose: to build a restaurant where remarkable food, exceptional wine, and genuine hospitality come together around one table.
For Jill, cooking has never been about showcasing technique. It has always been about creating a place where people feel welcomed, where every detail has a purpose, and where every guest leaves feeling just a little more connected than when they arrived. It's a philosophy rooted in the family table where her journey began—and one she hopes every guest experiences before they leave.

While her cuisine today has been shaped by a lifetime of travel, professional kitchens, and the study of wine, its heart still traces back to those early lessons learned at home: respect every ingredient, cook with intention, and create meals that invite people to slow down, share a bottle of wine, and enjoy one another's company.
